  • 1 cup fresh spinach, chopped
  • 1 cup bread crumbs
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup walnuts, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl, combine the chopped spinach, bread crumbs, cream cheese, Parmesan cheese, dried cranberries, walnuts, minced garlic, thyme, rosemary, salt, and pepper. Mix until well combined.
  2. Place the turkey breast on a clean cutting board. Using a sharp knife, carefully slice the turkey breast horizontally to create a pocket for the stuffing.
  3. Stuff the turkey breast with the spinach mixture, pressing it in firmly. Use toothpicks or kitchen twine to secure the opening if necessary.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed turkey breast on both sides until golden brown, about 3-4 minutes per side.
  5. Pour the chicken broth into the skillet and transfer it to the preheated oven. Roast for 25-30 minutes or until the internal temperature reaches 165°F.
  6. Remove the turkey from the oven and let it rest for 10 minutes before slicing.
