1 pound beef sirloin, thinly sliced
1/2 cup cornstarch
1/4 cup vegetable oil
1 red bell pepper, sliced
1 yellow onion, sliced
1/2 cup sugar
1/4 cup soy sauce
1/4 cup water
1 tablespoon rice vinegar
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 teaspoon red pepper flakes (optional)
2 green onions, chopped (for garnish)
Instructions
In a bowl, toss the sliced beef with cornstarch until evenly coated. Let it sit for about 10 minutes to allow the cornstarch to adhere.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the beef in batches, cooking until browned and crispy, about 3-4 minutes per batch. Remove the beef and set aside.
In the same skillet, add the sliced red bell pepper and onion. Stir-fry for about 2-3 minutes until they begin to soften.
In a separate bowl, mix together the sugar, soy sauce, water, rice vinegar, minced garlic, minced ginger, and red pepper flakes (if using). Pour this sauce over the vegetables in the skillet and bring to a simmer.
Return the cooked beef to the skillet and stir well to coat everything in the sauce. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Remove from heat and garnish with chopped green onions before serving.
Notes
For a healthier version, use leaner cuts of beef or substitute with chicken or tofu.
Add steamed broccoli or snap peas for extra vegetables and color in the dish.
