Ingredients
Scale
2 pounds beef chops (about 1-inch thick)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
8 ounces mushrooms, sliced (button or cremini)
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the beef chops with salt and black pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Add the beef chops and sear for about 4-5 minutes on each side until browned. Remove the chops from the skillet and set aside.
In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
Pour in the beef broth and Worcestershire sauce, stirring to combine. Add the dried thyme and bring the mixture to a simmer.
Return the beef chops to the skillet, cover, and reduce the heat to low. Let simmer for 15-20 minutes, or until the beef is cooked to your desired doneness.
Serve the beef chops topped with the garlic mushroom sauce and garnish with fresh parsley.
Notes
For a richer flavor, add a splash of red wine to the sauce before simmering.
Serve with mashed potatoes or rice to soak up the delicious sauce.
