2 tablespoons vegetable oil
1 pound beef sirloin, thinly sliced
4 cups bok choy, chopped
1 red bell pepper, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
1/4 cup beef broth
1 teaspoon sesame oil
Salt and pepper to taste
Cooked rice or noodles for serving
Instructions
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and season with salt and pepper. Stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Add the chopped bok choy and sliced red bell pepper to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, and beef broth. Pour this mixture into the skillet with the vegetables.
Return the cooked beef to the skillet and stir everything together. Cook for an additional 2-3 minutes until the sauce thickens. Drizzle with sesame oil before serving.
Serve the stir-fry over cooked rice or noodles.
Notes
For a spicier kick, add red pepper flakes or sliced jalapeños during step 2.
You can also substitute chicken or tofu for the beef for a different protein option.
