BBQ Chicken Bacon Bowl with Rice and Cheddar Cheese is a delicious and hearty meal that combines tender chicken, crispy bacon, and melted cheese over a bed of rice, all coated in BBQ sauce.

  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 6 slices cooked bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
  4. Remove the chicken from the skillet and let it rest for a few minutes before shredding it with two forks.
  5. In a large mixing bowl, combine the shredded chicken with the BBQ sauce and stir until well coated.
  6. In individual bowls, layer the cooked rice, BBQ chicken mixture, chopped bacon, and shredded cheddar cheese.
  7. Place the assembled bowls in the oven for about 10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped green onions if desired. Serve hot.

  • For a healthier option, substitute brown rice for white rice and use turkey bacon instead of regular bacon.
  • Add your favorite vegetables, such as corn or black beans, to the bowls for extra flavor and nutrition.
