2 large russet potatoes
4 ounces bacon, chopped
1 cup shredded cheddar cheese
1/2 cup BBQ sauce
1/4 cup sour cream
2 green onions, sliced
Salt and pepper to taste
Olive oil for drizzling
Instructions
Preheat the oven to 425°F (220°C).
Wash and scrub the russet potatoes. Cut them into thin fries and place them in a large bowl.
Drizzle the potatoes with olive oil and season with salt and pepper. Toss to coat evenly.
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
While the fries are baking, cook the chopped bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
Once the fries are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
Drizzle the BBQ sauce over the cheesy fries, then top with the crispy bacon, sour cream, and sliced green onions.
Serve immediately and enjoy!
Notes
For a spicier kick, add jalapeños or a sprinkle of cayenne pepper to the fries before baking.
Substitute the cheddar cheese with pepper jack for a creamy, spicy flavor.
