2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup unsalted butter, melted
1 cup milk
2 large eggs
1 teaspoon vanilla extract
1 cup chopped walnuts or pistachios
1/2 cup honey
1/4 cup water
1 tablespoon lemon juice
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In another bowl, combine the melted butter, milk, eggs, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped nuts.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
While the muffins are baking, prepare the honey syrup. In a small saucepan, combine honey, water, and lemon juice. Bring to a simmer over medium heat and cook for 5 minutes. Remove from heat and let cool slightly.
Once the muffins are done, remove them from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack.
While the muffins are still warm, drizzle the honey syrup over the top of each muffin, allowing it to soak in.
Serve warm or at room temperature.
Notes
For a richer flavor, try adding a pinch of ground cloves to the batter.
You can also substitute the nuts with your favorite dried fruits, such as chopped dried apricots or figs, for a fruity twist.
