2 large boneless, skinless chicken breasts (about 1 pound total)
1 cup Caesar salad dressing
1 cup shredded Parmesan cheese
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Grease a baking dish with cooking spray or a little olive oil.
In a bowl, combine the Caesar dressing, garlic powder, Italian seasoning, salt, and pepper. Mix well.
Place the chicken breasts in the prepared baking dish and pour half of the dressing mixture over them, ensuring they are well coated.
In another bowl, mix the panko breadcrumbs and half of the Parmesan cheese. Sprinkle this mixture evenly over the chicken.
Drizzle the remaining dressing mixture over the top of the breadcrumbs and sprinkle with the remaining Parmesan cheese.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
Remove from the oven and let it rest for 5 minutes before slicing. Garnish with chopped parsley before serving.
Notes
For a spicier kick, add a teaspoon of red pepper flakes to the dressing mixture.
Serve with a side of roasted vegetables or a simple green salad for a complete meal.
