Baked Blueberry Fritter Bites are delightful mini treats that are easy to make and perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well combined.
  3. In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries, being careful not to crush them.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. While the fritter bites are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  8. Once the fritter bites are done, let them cool in the pan for 5 minutes before transferring them to a wire rack. Drizzle the glaze over the warm fritter bites.
  9. Serve warm or at room temperature.

  • For a lemon twist, add the zest of one lemon to the batter for a refreshing flavor.
  • Substitute the blueberries with raspberries or chopped strawberries for a different fruity option.
