- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon powdered sugar (for dusting)
- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well combined.
- In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the blueberries and lemon juice until evenly distributed.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the fritter bites to cool in the pan for 5 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.
Notes
- For a sweeter treat, drizzle a simple glaze made from powdered sugar and milk over the fritter bites after they cool.
- You can also substitute the blueberries with raspberries or chopped strawberries for a different flavor.
