Baked Blueberry Fritter Bites are a delicious and easy-to-make treat, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar until well combined.
  3. In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries and lemon juice until evenly distributed.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the fritter bites to cool in the pan for 5 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.

Notes

  • For a sweeter treat, drizzle a simple glaze made from powdered sugar and milk over the fritter bites after they cool.
  • You can also substitute the blueberries with raspberries or chopped strawberries for a different flavor.
