2 pounds boneless, skinless chicken thighs
1/2 cup honey
1/4 cup Dijon mustard
1/4 cup whole grain mustard
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon paprika
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, salt, black pepper, thyme, and paprika until well combined.
Place the chicken thighs in a large baking dish and pour the honey mustard mixture over the chicken, ensuring each piece is well coated.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
For a caramelized finish, switch the oven to broil for the last 2-3 minutes of cooking, watching closely to prevent burning.
Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley.
