1 pound ground beef
1 pound ground pork
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
1/4 cup chopped fresh parsley
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces mozzarella cheese, cut into sticks
8 slices of bacon
1/2 cup ketchup
1 tablespoon Worcestershire sauce
Instructions
Preheat the oven to 350°F.
In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
On a large piece of plastic wrap, shape the meat mixture into a rectangle about 1-inch thick.
Place the mozzarella sticks in the center of the rectangle.
Using the plastic wrap, roll the meat over the cheese to enclose it completely, forming a loaf shape.
Wrap the bacon slices around the meatloaf, overlapping them slightly.
Place the meatloaf seam-side down in a baking dish.
In a small bowl, mix together ketchup and Worcestershire sauce, then spread it over the top of the meatloaf.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
Let it rest for 10 minutes before slicing.
Notes
For a spicier kick, add chopped jalapeños or red pepper flakes to the meat mixture.
You can substitute the mozzarella with cheddar or pepper jack cheese for a different flavor profile.
