4 slices of sourdough bread
4 ounces of sharp cheddar cheese, grated
4 ounces of pepper jack cheese, grated
4 slices of cooked bacon, chopped
1 ripe avocado
1 small lime, juiced
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter, softened
Instructions
In a bowl, mash the avocado with a fork. Add lime juice, garlic powder, salt, and black pepper. Mix until well combined and set aside.
Heat a skillet over medium heat. While the skillet is heating, spread softened butter on one side of each slice of sourdough bread.
Place two slices of bread, buttered side down, in the skillet. Layer half of the cheddar and pepper jack cheese on top of each slice.
Spoon half of the guacamole mixture over the cheese, then sprinkle half of the chopped bacon on top.
Top with the remaining cheese and place the other two slices of bread on top, buttered side up.
Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
Remove from the skillet, let cool for a minute, then slice in half and serve.
Notes
For a spicier kick, add sliced jalapeños to the guacamole mixture.
Substitute turkey bacon for a lighter option or use a plant-based bacon alternative for a vegetarian version.
