8 slices of bread (your choice, such as sourdough or white)
8 ounces of cheddar cheese, shredded
8 ounces of mozzarella cheese, shredded
8 slices of cooked bacon, chopped
1 pound of ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
4 tablespoons butter, softened
Optional: sliced pickles, ketchup, and mustard for serving
Instructions
In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Season with garlic powder, onion powder, salt, and pepper. Drain any excess fat and set aside.
In a separate bowl, mix the cheddar and mozzarella cheeses together.
Heat a large skillet or griddle over medium heat. Spread 1 tablespoon of softened butter on one side of each slice of bread.
Place 4 slices of bread, buttered side down, onto the skillet. Layer each with a generous amount of the cheese mixture, followed by a portion of the cooked ground beef and chopped bacon. Top with more cheese and cover with another slice of bread, buttered side up.
Cook for about 3-4 minutes, or until the bottom slice is golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
Remove from the skillet and let cool for a minute before slicing in half. Serve with pickles, ketchup, and mustard if desired.
Notes
For a spicier kick, add jalapeños or hot sauce to the beef mixture.
Substitute turkey or plant-based ground meat for a lighter option.
