2 pork tenderloins (about 1 pound each)
1/2 cup brown sugar, packed
1/4 cup soy sauce
1/4 cup Dijon mustard
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
6 slices of cooked bacon, chopped
Instructions
Preheat your oven to 400°F.
In a small bowl, mix together brown sugar, soy sauce, Dijon mustard, olive oil, garlic powder, onion powder, black pepper, salt, and cayenne pepper until well combined.
Place the pork tenderloins in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
Remove the pork from the marinade and let any excess drip off. Reserve the marinade for later.
In a large oven-safe skillet over medium-high heat, sear the pork tenderloins for about 2-3 minutes on each side until browned.
Pour the reserved marinade over the pork and sprinkle the chopped bacon on top.
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F.
Remove from the oven and let the pork rest for 5-10 minutes before slicing. Serve warm, drizzled with the pan juices.
Notes
For a sweeter glaze, add an extra tablespoon of brown sugar to the marinade.
Try using turkey bacon for a lighter version of the dish while still keeping the bacon flavor.
