2 pork tenderloins (about 1 pound each)
1/2 cup brown sugar, packed
1/4 cup soy sauce
1/4 cup Dijon mustard
1 tablespoon minced garlic
1 teaspoon black pepper
1 teaspoon salt
8 slices of bacon
1 tablespoon olive oil
Instructions
Preheat your oven to 400°F.
In a small bowl, mix together the brown sugar, soy sauce, Dijon mustard, minced garlic, black pepper, and salt until well combined.
Place the pork tenderloins in a large resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to overnight for more flavor.
Remove the pork from the marinade and let any excess drip off. Reserve the marinade for later use.
Wrap each pork tenderloin with 4 slices of bacon, securing the ends with toothpicks if necessary.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped tenderloins and sear on all sides until the bacon is crispy, about 3-4 minutes per side.
Pour the reserved marinade over the tenderloins and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 145°F.
Remove from the oven and let the pork rest for 5-10 minutes before slicing.
Slice the pork tenderloin and serve drizzled with the pan juices.
Notes
For a spicier kick, add a teaspoon of red pepper flakes to the marinade.
You can also substitute turkey bacon for a leaner option.
Serve with roasted vegetables or a fresh salad for a complete meal.
