2 pork tenderloins (about 1 pound each)
1 cup brown sugar, packed
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
8 slices of bacon
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 400°F.
In a small bowl, mix together the brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a spice rub.
Pat the pork tenderloins dry with paper towels. Rub the spice mixture all over the tenderloins, ensuring they are evenly coated.
Wrap each tenderloin with 4 slices of bacon, securing the ends with toothpicks if necessary.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped tenderloins and sear for about 3-4 minutes on each side until the bacon is crispy and browned.
Drizzle the apple cider vinegar over the tenderloins, then transfer the skillet to the preheated oven. Roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F.
Remove the skillet from the oven and let the tenderloins rest for 5-10 minutes before slicing.
Notes
For a sweeter glaze, brush the tenderloins with additional brown sugar during the last 5 minutes of cooking.
To make it a complete meal, serve with roasted vegetables or a side salad.
You can also substitute turkey bacon for a lighter version.
