  • 2 pork tenderloins (about 1 pound each)
  • 1 cup brown sugar, packed
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices of bacon
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together the brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a spice rub.
  3. Pat the pork tenderloins dry with paper towels. Rub the spice mixture all over the tenderloins, ensuring they are evenly coated.
  4. Wrap each tenderloin with 4 slices of bacon, securing the ends with toothpicks if necessary.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped tenderloins and sear for about 3-4 minutes on each side until the bacon is crispy and browned.
  6. Drizzle the apple cider vinegar over the tenderloins, then transfer the skillet to the preheated oven. Roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F.
  7. Remove the skillet from the oven and let the tenderloins rest for 5-10 minutes before slicing.
