  • ¼ cup bourbon
  • ½ cup caramel sauce
  • 4 strips cooked bacon, chopped

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of sugar, mixing until well incorporated.
  6. Add sour cream, eggs, and vanilla extract, mixing until smooth.
  7. Pour in the bourbon and mix until combined.
  8. Fold in the chopped bacon, then pour the cheesecake batter over the cooled crust in the springform pan.
  9. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Drizzle the top with caramel sauce and refrigerate for at least 4 hours, or overnight, before serving.
