1 pound ground beef
4 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
1 cup beer (lager or ale)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
Salt and pepper to taste
4 hamburger buns
Chopped fresh parsley for garnish (optional)
Instructions
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
Add the diced onion to the skillet and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Pour in the beer, Worcestershire sauce, and Dijon mustard. Stir to combine and let it simmer for about 5 minutes until the mixture thickens slightly.
Reduce the heat to low and stir in the smoked paprika, cooked bacon, cheddar cheese, and mozzarella cheese. Continue to stir until the cheese is melted and the mixture is creamy. Season with salt and pepper to taste.
Toast the hamburger buns lightly if desired. Spoon the bacon beer cheese mixture onto the bottom half of each bun, then top with the other half. Garnish with chopped parsley if using.
Notes
For a spicier version, add diced jalapeños or a dash of hot sauce to the beef mixture.
Substitute ground turkey or chicken for a lighter option, and use low-fat cheese to reduce calories.
