A refreshing and nutritious Autumn Waldorf Salad featuring a delightful mix of fruits, nuts, and a creamy yogurt dressing.

Ingredients

Scale
  • 2 cups diced apples (about 2 medium apples)
  • 1 cup diced celery (about 2 stalks)
  • 1 cup red grapes, halved
  • 1 cup chopped walnuts (toasted if desired)
  • 1/2 cup dried cranberries
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • Lettuce leaves for serving (optional)

Instructions

  1. In a large mixing bowl, combine the diced apples, celery, red grapes, walnuts, and dried cranberries.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
  3. Pour the yogurt dressing over the fruit and nut mixture. Gently toss until everything is well coated.
  4. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve the salad on a bed of lettuce leaves if desired, or simply in bowls.

Notes

  • For a crunchier texture, add a handful of shredded carrots or diced pears.
  • Substitute the walnuts with pecans or almonds for a different flavor profile.
