3 cups peeled and diced apples (about 3 medium apples)
1 cup granulated sugar
1 cup packed brown sugar
1 cup vegetable oil
4 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup chopped walnuts or pecans (optional)
For the glaze:
1/2 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F. Grease and flour a 9×13-inch baking pan.
In a large mixing bowl, combine the diced apples, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the chopped nuts.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
While the cake is cooling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the cooled cake before serving.
Notes
For added flavor, try incorporating 1/2 teaspoon of nutmeg or 1/4 teaspoon of allspice into the dry ingredients.
You can substitute the apples with pears or a mix of both for a different twist on this cake.
