A delicious and savory Apple Cider Pork Roast that combines the sweetness of apple cider with tender pork loin, perfect for family gatherings.

  • 2 to 3 pounds pork loin roast
  • 1 cup apple cider
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 apples, cored and sliced (preferably Granny Smith or Honeycrisp)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. In a small bowl, mix together the thyme, rosemary, salt, black pepper, and red pepper flakes. Rub this mixture all over the pork roast.
  4. In a roasting pan, place the pork roast and surround it with the sautéed onions, sliced apples, and any remaining garlic.
  5. Pour the apple cider and apple cider vinegar over the pork and apples. Sprinkle the brown sugar on top.
  6. Cover the roasting pan with aluminum foil and bake in the preheated oven for 1 hour.
  7. After 1 hour, remove the foil and continue to roast for an additional 30-45 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  8. Once cooked, remove the roast from the oven and let it rest for 10-15 minutes before slicing. Serve with the pan juices and roasted apples.

Notes

  • For a sweeter flavor, add a tablespoon of maple syrup to the apple cider before pouring it over the roast.
  • Substitute the pork loin with pork shoulder for a more tender, fall-apart texture. Adjust cooking time as needed.
