2 pounds pork tenderloin
1 cup apple cider
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
Salt and pepper to taste
2 large sweet potatoes (about 1.5 pounds)
1/4 cup milk
2 tablespoons butter
1/2 teaspoon cinnamon
Instructions
Preheat the oven to 400°F.
In a small bowl, mix together the apple cider, Dijon mustard, garlic powder, onion powder, thyme, salt, and pepper.
Place the pork tenderloin in a baking dish and pour the apple cider mixture over it, ensuring the pork is well-coated.
Drizzle olive oil over the pork and rub it in for extra flavor.
Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F. Baste the pork with the juices halfway through cooking.
While the pork is baking, peel and chop the sweet potatoes into chunks. Boil them in a large pot of salted water for about 15-20 minutes, or until tender.
Drain the sweet potatoes and return them to the pot. Add milk, butter, and cinnamon, then mash until smooth and creamy. Adjust seasoning with salt if needed.
Once the pork is done, let it rest for 5 minutes before slicing. Serve the sliced pork with the mashed sweet potatoes on the side, drizzled with the pan juices.
Notes
For added sweetness, stir in a tablespoon of maple syrup into the mashed sweet potatoes.
You can substitute the pork tenderloin with chicken breasts for a different protein option.
