Delicious and fluffy blueberry muffins with a creamy cheese filling that will delight every bite.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.
  4. Gradually add the sugar to the butter and cream cheese mixture, beating until well combined.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
  7. Gently fold in the blueberries, being careful not to overmix.
  8. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a touch of sweetness, sprinkle a little coarse sugar on top of the muffins before baking.
  • Substitute half of the blueberries with chopped strawberries or raspberries for a mixed berry muffin variation.
